I have recently experimented with using cream cheese in my pasta so when I saw the videos for this baked feta pasta I thought I would make it with a twist.
I had to pick up some things at my local Walmart but I had most of the things at home already.
What Do I Need To Make Pasta?
What I used was
- A block of feta cheese
- Half a block of cream cheese
- 10 oz of grape tomatoes
- Half a box of bow tie pastas
- One garlic clove
- Garlic powder
- Onion powder
- Red pepper flakes
How Do I Make The Baked Feta Pasta?
The first thing I did was preheat my oven to 400F. While the oven was preheating I grabbed a glass baking dish and tossed the tomatoes in. I used grape tomatoes but you could also use cherry tomatoes. I just recommend you use smaller tomatoes as they pack more punch and will be easier to smush up.
Next, I added some olive oil. You’ll notice in the videos they use quite a bit but I used just enough to lightly coat the tomatoes. I then used some salt and pepper. Remember though, feta cheese is already salty so don’t add too much extra.
Next, I set my block of feta cheese in the middle of the dish so that it was surrounded by the tomatoes. Using a block is way easier than using crumbled feta and will bake much better.
Now here is the twist! I cut a block of cream cheese in half and added it to the dish beside the feta. I figured adding this would give some creaminess to the pasta. Also, who doesn’t love more cheese!
Another thing I love is garlic so I added one garlic clove to the dish as well no need to mince just add it right in.
After everything was added I got to the seasonings. I added a bit more salt and pepper, some garlic powder, onion powder, basil, and some red pepper flakes. Depending on if you like spice adjust the amount of red pepper flakes you use. I used way too much but you live and learn I guess.
Put the baking dish in the oven for 35 minutes and you’ll see the cheese start to brown and the tomatoes will start to split open.
When there were 15 minutes left on the timer for the oven I started to boil a pot of water for the pasta. I went with bow tie pasta but this would be delicious with any type of shell pasta as well.
I cooked my pasta for 12 minutes adding a splash of olive oil and salt to the water. When it was done I drained the water leaving about a ¼ cup of pasta water in the pot. This is the key to making good pasta sauce!
When the timer went off for the oven I removed the dish. Using a fork I found the garlic clove and squished it and removed any chunks including the skin. I then squished the cheese in the center stirring to combine the cheese and tomatoes altogether. I even squished the tomatoes a bit just so they weren’t too chunky.
I then added the pasta and leftover pasta water to the sauce and stirred until everything was combined well.
Scoop out your pasta into a bowl and you are ready to enjoy!
The key to making this pasta delicious is saving your pasta water and seasoning well! Don’t be afraid to really load up on the spices. Just be cautious with the salt.
The cream cheese twist really adds a nice creamy texture to the sauce. But you could make it with or without.
